We have been walking part of the Isle of Wight Coastal path on the West of the Island between Brighstone and Chale today. Weather was snow snow snow big fluffy flakes the size of goose feathers but easy walking certainly better than trudging through the mud of last week.Only two colours the grey of the sea and sky and the white of the snow as far as you could see. Had a quick Christmas picnic to keep us warm at Shepard’s Chine of Spiced Potato cakes, Mince pies, Coffee and hot mulled wine all very yummy.
We felt that we were the only people on the Island did not see anyone on our walk did see however, a Hare and a couple of what I thought were rooks but were so big I think they were Ravens on the Cliff edge at Atherfield. Jasper and Spider our two Lancashire Heelers behaved like a pair of runaway snow ploughs! We finished at the Wight Mouse Inn at Chale an Oasis of warmth. Lovely walk great day!
Here is the recipe for the spiced potato cakes tasty cheap and filling
1KG of mashed potatoes ( seasoned)
1 TBSP of Paprika
2TSP of ground Cumin
Pinch of Cayenne Pepper
Bunch of Fresh Coriander
3 Eggs
Little oil for frying
Method
Mix the potato with all the ingredients in a big bowl
Form into round flat cakes
Fry on both sides ( not too hot or they will burn before they are cooked)
Place on to Kitchen paper to remove excess oil
Once cool can be frozen
